Italian Lime Dressing Tilapia

I think this recipe came from the Good Seasons dressing recipe website. The original recipe calls for tequila, cilantro, cayenne pepper, and red snapper. I have simplified it to my liking and use Tilapia (individually frozen from Costco) instead of red snapper. Also, you could probably make your own Italian dressing mix.

Ingredients
  • 1 envelope zesty Italian dressing mix
  • 1/4 cup fresh lime juice
  • 1/4 cup oil
  • 1 pound Tilapia fillets

Directions
  1. Mix all ingredients - except for fish - until well blended.
  2. Pour dressing mixture over fish in a Ziploc bag or a shallow dish with a cover. Refrigerate 30 minutes to 1 hour to marinate. Discard marinade.
  3. Preheat broiler.
  4. Line a rimmed cookie sheet with foil and spray with cooking spray.
  5. Arrange fillets in a single layer on prepared pan.
  6. Broil a few inches from the heat for 3-5 minutes.
  7. Flip fillets over and broil for a couple more minutes, until cooked through. Do not overcook fish.
  8. Serve immediately.
